Turkey Sausage Pizza
For an easy variation on this pizza, substitute cauliflower for the broccoli, minced scallions for the fresh basil, and thyme for the oregano.
    Pizza Dough:
  • 1 package (1/4 ounce) active dry yeast
  • 1 teaspoon sugar
  • 1-1/2 cups lukewarm (1050F to 1150F) water
  • 3 1/2 cups flour
  • 1/2 teaspoon salt

    Toppings & Sauce:
  • 2 cups small broccoli florets
  • 2 cans (8 ounces each) no-salt-added tomato sauce
  • 1 large carrot, finely shredded
  • 2 tablespoons chopped fresh basil
  • 1/2 teaspoon dried oregano
  • 1 cup shredded part-skim mozzarella cheese
  • 1 small red bell pepper, cut into very thin strips
  • 4 ounces Italian-style fresh turkey sausage, casings removed

1. To make the dough: In a small bowl, stir yeast and sugar into 1/4 cup of lukewarm water. Let sit until foamy, about 5 minutes.

2. In a large bowl, combine flour and salt, mixing until well combined. Beat in yeast mixture and remaining 1-1/4 cups water; knead until dough is smooth and elastic; about 5 minutes if you have a mixer with dough hook, or 10 minutes by hand. Transfer to bowl sprayed with nonstick cooking spray, cover with plastic wrap, and place in a warm spot until almost doubled in bulk, about 45 minutes.

3. To make the toppings: In a large pot of boiling water, blanch broccoli 2 minutes or until crisp-tender. Drain, rinse under cold running water to stop cooking; drain again.

4. In large nonstick skillet, combine tomato sauce, carrot, basil, and oregano and bring to a boil over medium heat. Reduce heat to low, cover, and simmer 5 minutes or until carrot is tender. Set aside to cool to room temperature.

5. Preheat oven to 500°F. Punch dough down and turn out onto lightly floured surface. With floured rolling pin, roll dough out to 12-inch round and fit into prepared pizza pan, pressing dough against sides to form high edges. Spoon sauce evenly over dough and bake on lowest shelf of oven (or on bottom of oven if possible) for 10 minutes.

6. Sprinkle cheese on top, then arrange broccoli florets and bell pepper slivers on top. Crumble turkey sausage over pizza. Return pizza to oven and bake 10 minutes or until dough is crisp and sausage is cooked through.
