Turkey Burgers with Salsa
Serve homemade ice-cold limeade with these Mexican-style burgers.
  • Half a large green bell pepper, cut into chunks
  • 2 tablespoons coarsely chopped red onion
  • 1 or 2 fresh jalapeño peppers, cut into chunks, some seeds removed
  • 1/2 pound tomatoes, cut into chunks
  • 1 tablespoon fresh lemon juice
  • 1/8 teaspoon salt
  • Large pinch of cayenne pepper (optional)

  • 1 pound skinless turkey breast, cut into chunks
  • 1/4 cup plain dried bread crumbs
  • 2 tablespoons reduced-fat mayonnaise
  • 1/2 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon salt
  • Four crusty whole wheat rolls (about 2 ounces each)

    1. To make the salsa: In a food processor, combine bell pepper, onion and jalapeño, and pulse until finely chopped. Add tomatoes and pulse until salsa is finely chopped but still has some texture. Transfer to a medium bowl and stir in lemon juice, salt and cayenne (if using).

    2. To make the burgers: Preheat broiler and broiler pan.

    3. In a food processor, process turkey until finely chopped. Add 1/4 cup of salsa, bread crumbs, mayonnaise, cumin, black pepper and salt, and pulse until blended. Shape mixture into 4 patties.

    4. Broil patties 5 inches from the heat for 5 minutes per side, or until cooked through. Place patties on rolls and top with salsa.
