Sweet & Spicy Beef Kebabs
Pork or chicken will like this spicy and sweet marinade, too. If using wooden skewers, soak them for at least a half hour to avoid burning.
  • 2/3 cup apricot nectar
  • 2 tablespoons dark brown sugar
  • 1 teaspoon grated lime zest
  • 3 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1 pound well-trimmed beef sirloin, cut into 16 chunks
  • 1 red bell pepper, cut into 16 chunks
  • 1 green bell pepper, cut into 16 chunks
  • 1 red onion, cut into 16 chunks

1. In medium bowl, combine apricot nectar, brown sugar, lime zest, lime juice, garlic, oregano, and salt. Add beef, bell peppers, and onion and toss to coat. Marinate at room temperature for 30 minutes or up to 12 hours in refrigerator.

2. Preheat broiler. Lift meat and vegetables from apricot mixture and alternately thread beef, bell peppers, and onion onto 8 skewers. Reserve any marinade left in bowl.

3. Broil the kebabs 6 inches from the heat, turning occasionally, basting with marinade, for 8 to 10 minutes or until beef and vegetables are cooked through.
