Sweet & Sour Peanut Sauce
Use this sauce to dress noodles or vegetables. This amount is enough for coating 1 pound of spaghetti, linguine, or fettuccine.
  • 2 cloves garlic, peeled
  • 1/2 cup smooth peanut butter
  • 2/3 cup cilantro
  • 2 tablespoons rice vinegar or cider vinegar
  • 1 tablespoon plus 1 teaspoon reduced-sodium soy sauce
  • 2 teaspoons honey
  • 3/4 teaspoon hot pepper sauce
  • 1/4 teaspoon salt

    1. In small saucepan of boiling water, cook garlic about 2 minutes to blanch. Drain.

    2. Transfer garlic to blender or food processor. Add peanut butter, cilantro, vinegar, soy sauce, honey, hot sauce, salt, and 1/2 cup of water and process until smooth.
