Summer Smoked Turkey Salad
Summer Smoked Turkey SaladThe combination of cantaloupe and grape tomatoes may not seem logical, but they are both fruits, after all, and grape tomatoes are quite sweet and they are a nice contrast to the smokiness of the turkey.
  • 1 cup cubed (1/2-inch) cantaloupe
  • 2 cups grape tomatoes
  • 3/4 pound smoked turkey breast, cut into 1/2-inch cubes
  • 4 scallions, coarsely chopped
  • 3 tablespoons minced fresh basil
  • 2 tablespoons chopped pistachios
  • 2 tablespoons honey-mustard
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons dark sesame oil
  • 1/2 teaspoon soy sauce

1. In a large bowl, toss together the melon cubes, tomatoes, turkey, scallions, basil, and pistachios.

2. In a small bowl, whisk together the honey-mustard, lemon juice, sesame oil, and soy sauce. Toss the dressing with the turkey mixture just before serving.
