Pumpkin-Filled Wontons
The key to successfully serving these easy-to-make, tasty wontons is to preheat the pasta bowls in a low oven while you are preparing the dumplings. Cook the wontons in small batches to prevent them from sticking together or use two pots; then transfer the wontons to the bowls and finish the sauce.
  • 1 cup canned solid-pack pumpkin puree
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon finely ground almonds
  • 1 tablespoon plus 1 teaspoon sugar
  • 1 tablespoon plus 1 teaspoon plain dried bread crumbs
  • 1/2 teaspoon salt
  • 1 egg, lightly beaten
  • 40 wonton wrappers (3-1/2-inch squares)
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon sage
  • 1/8 teaspoon black pepper
  • 1 teaspoon cornstarch blended with 1 tablespoon water
  • 1 tablespoon reduced-fat sour cream

1. In medium bowl, stir together pumpkin, 2 tablespoons of Parmesan, almonds, sugar, bread crumbs and 1/4 teaspoon of the salt. Add egg and mix until well combined.

2. Spoon mixture into center of 20 wonton wrappers, moisten borders of wrappers with water and place another wonton wrapper on top of each, pressing down to seal edges.

3. In large pot of boiling water, cook wontons (in small batches so they will cook evenly and not stick together) until al dente, about 8 minutes. Drain well, reserving 3/4 cup of pasta cooking liquid.

4. In large skillet, combine reserved pasta cooking liquid, lemon juice, sage, pepper and remaining 1/4 teaspoon salt. Bring to a boil over high heat and boil for 2 minutes.

5. Stir cornstarch mixture into broth mixture and boil until lightly thickened, about 1 minute. Stir in remaining 2 tablespoons Parmesan and sour cream.

6. Spoon wontons into 4 pasta bowls, spoon sauce on top and serve.
