Orange-Honey Acorn Squash
Forget about serving acorn squash with butter: This orange-honey combination perfectly complements the flavor of the acorn squash.
  • 2 acorn squash (1 pound each), halved and seeded
  • 1/3 cup water
  • 2 tablespoons orange all-fruit spread
  • 2 tablespoons orange juice
  • 2 tablespoons honey
  • 1/4 teaspoon salt

1. Preheat the oven to 400°F.

2. Place the squash halves cut-sides down in baking pan. Add the water, cover with foil, and bake for 25 minutes.

3. Meanwhile, in a small bowl, combine the orange fruit spread, orange juice, honey, and salt.

4. Drain any liquid remaining in the baking pan and turn the squash cut-sides up. Spoon the orange-honey mixture into the squash and bake for 35 minutes, or until tender.
