New-Fashioned Coleslaw
Plain nonfat yogurt replaces most of the mayonnaise in this classic dish.
  • 1 cup plain nonfat yogurt
  • 2 tablespoons light mayonnaise
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons Dijon mustard
  • 1 tablespoon distilled white vinegar
  • 1 tablespoon sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 small head green cabbage (1-1/4 pounds) shredded
  • 4 carrots, shredded
  • 1 red bell pepper, cut into matchstick strips

1. Spoon the yogurt into a fine-mesh sieve or a coffee filter cone and drain off excess liquid for 2 minutes.

2. In large bowl, whisk together yogurt and mayonnaise until smooth. Add lemon juice, mustard, vinegar, sugar, salt, and pepper and whisk to combine. Add cabbage, carrots, and bell pepper; toss to combine.

3. Refrigerate at least one hour before serving.
