Nectarine-Pepper Salsa
This fresh fruit salsa is sweetly spiced with Caribbean seasonings. Serve with broiled fish or poultry, or as a fresh chutney alongside a curried dish.
  • 1 pound nectarines, cut into 1/2-inch dice
  • 1 small red bell pepper, cut into 1/2-inch squares
  • 1/2 cup diced red onion
  • 1 teaspoon minced fresh or pickled jalapeño pepper
  • 2-1/2 teaspoons sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon allspice
  • 2 tablespoons fresh lime juice
  • 2 tablespoons orange juice

In medium bowl, stir together nectarines, bell pepper, onion, jalapeño, lime juice, orange juice, sugar, salt, ginger, and allspice. Refrigerate until serving time.
