Mushroom, Onion & Roasted Pepper Pizza
For a more colorful pizza, use green and yellow peppers.
  • 2 green bell peppers, cut lengthwise into flat panels
  • 1 tablespoon yellow cornmeal
  • 1 pound store-bought pizza dough
  • 1-1/2 cups tomato sauce
  • 1 red onion, halved and thinly sliced
  • 8 ounces mushrooms, thinly sliced
  • 1/2 teaspoon dried oregano
  • 1 cup shredded part-skim mozzarella cheese (4 ounces)
  • 2 tablespoons grated Parmesan cheese

1. Preheat broiler. Broil pepper pieces, skin-side up, 6 inches from heat until skin is charred. When cool enough to handle, peel and cut into 1/2-inch-wide strips. Turn oven to 4500F.

2. Lightly dust a baking sheet with cornmeal. Place pizza dough on baking sheet and press out to 10-inch round.

3. Cover dough with tomato sauce. Top with onion, mushrooms, and oregano, and bake on bottom shelf of oven for 20 minutes, or until crust is lightly browned.

4. Scatter mozzarella over pizza and top with roasted pepper strips and Parmesan. Bake for 5 minutes, or until cheese has melted and peppers are piping hot.
