Lime-Glazed Bananas with Almonds & Coconut
Here's a soul-satisfying comfort dessert. You can jazz it up a bit with a scoop of frozen yogurt or ice cream. Rice syrup is a mild liquid sweetener that doesn't overpower the fruit. You can substitute a mild flavored honey.
  • 4 large bananas, peeled
  • 1/4 cup rice syrup or honey
  • 3 tablespoons lime juice
  • 2 teaspoons unsalted butter
  • 2 tablespoons sliced almonds
  • 2 tablespoons angel flake coconut

1. Preheat oven to 400°F. Halve bananas crosswise and place in an 8-inch square glass baking dish. In small bowl, stir together rice syrup and lime juice; spoon over bananas. Dot with butter.

2. Bake 10 minutes, spoon some of the pan juices over the bananas and bake 10 minutes longer. Sprinkle almonds and coconut over and bake 5 minutes longer. Serve warm.
