Herb-Grilled Red Onions
The little bit of sugar in the herb coating brings out the natural sweetness of the onions while helping them to caramelize, too.
  • 2 tablespoons light brown sugar
  • 1-1/2 teaspoons ground ginger
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon allspice
  • 1/2 teaspoon pepper
  • 3 pounds large red onions, cut into 1/2-inch-thick rounds
  • 3/4 cup red grape juice
  • 1 tablespoon olive oil

1. Spray a broiler rack or grill topper with nonstick cooking spray. Preheat the broiler or grill.

2. In a large bowl, combine the brown sugar, ginger, thyme, salt, allspice, and pepper. Add the onion rings, tossing well to coat. Add the grape juice and oil and toss again.

3. Place the onions on the broiler pan or grill topper and broil 6 inches from the heat or grill (covered), turning occasionally, for 12 to 18 minutes, or until the onions are crisp-tender. Serve hot.
