Grilled Fruit with Maple-Currant Dessert Marinade
Fresh grilled fruit is an unbelievably easy-to-make yet extremely impressive dessert, especially when brushed with this heady combo of fresh ginger juice, maple sugar, and currant jelly.
  • 2-inch piece fresh ginger
  • 1/4 cup maple sugar or light brown sugar
  • 3 tablespoons red currant jelly
  • 2 tablespoons water
  • 2 teaspoons extra-light olive oil
  • 1/2 teaspoon allspice
  • A pinch of black pepper
  • A pinch of salt
  • 4 nectarines, halved and pitted
  • 4 thick slices fresh pineapple, cored and cut into quarters
  • 2 bananas, halved crosswise and then lengthwise

1. Grate the ginger into a small bowl. Squeeze the ginger to extract as much ginger juice as possible, discarding the solids. Measure out 1 tablespoon of juice.

2. In a small saucepan, combine the jelly, maple sugar, and water. Stir over low heat until the jelly has melted and the sugar has dissolved. Remove from the heat and transfer to a large shallow bowl.

3. Stir the ginger juice, oil, allspice, pepper, and salt into the jelly mixture.

4. Add the fruit to the bowl and toss with the marinade. Let stand at room temperature while you preheat the grill to medium.

5. Grill the fruit on a grill topper (brushed with oil) until heated through. Watch to be sure the marinade does not burn.
