Fresh Orange Gelatin with Strawberries
Smooth fresh orange jelly is punctuated by the crunch of sliced strawberries and mandarin orange sections. Mandarin oranges, which are actually tangerines, are high in vitamin C and have a respectable amount of beta-carotene as well.
  • 1 envelope plain unflavored gelatin
  • 2 cups fresh orange juice
  • 1 teaspoon grated orange zest
  • 1/4 teaspoon vanilla extract
  • 1 cup canned juice-packed mandarin oranges, well drained
  • 1-1/4 cups sliced strawberries

1. In a small saucepan, sprinkle gelatin over 1/2 cup of orange juice. Warm mixture over very low heat, stirring just until gelatin is dissolved, then remove from heat.

2. Let gelatin mixture cool to lukewarm, then combine with remaining juice, orange zest, and vanilla.

3. In parfait glasses, spoon alternating layers of mandarin oranges, orange gelatin and strawberries. Repeat layering, ending with strawberries on top. Chill until set.
