The sweetness of the tarragon and the pineapple play off each other beautifully in this tart-sweet-hot salad dressing.
- 3/4 cup unsweetened pineapple juice
- 1/4 cup fresh lime juice
- 1/4 cup sugar
- 1-1/2 teaspoons tarragon
- 3/4 teaspoon salt
- 1/4 teaspoon cayenne
- 1 tablespoon granulated fruit pectin
1. In a small saucepan, combine the pineapple juice, lime juice, sugar, tarragon, salt, and cayenne. Bring to a boil over medium heat.
2. Stir in the pectin, return to a boil, and cook, stirring constantly, for 1 minute. Pour the dressing into a container and let cool to room temperature. Refrigerate.
