Fat-Free Balsamic Vinaigrette
Although as far as labeling laws go this vinaigrette is fat-free, it actually has a little bit of fat (less than half a gram), which comes from the mustard. However, it has absolutely no saturated fat.
  • 2 teaspoons cornstarch
  • 1/4 cup water
  • 1/2 cup balsamic vinegar
  • 2 shallots, minced (1/4 cup) or minced whites of 2 scallions
  • 4 teaspoons Dijon mustard
  • 1 tablespoon honey

1. In a small saucepan, whisk together the cornstarch and water until smooth. Bring to a boil over medium heat and cook until thickened, about 1 minute.

2. Off the heat, whisk in the vinegar, shallots, mustard, and honey until smooth. Store in the refrigerator.
