Double-Pineapple Sauce
This sauce can be served with either sweet or savory dishes. It's equally delicious over frozen yogurt or alongside grilled chicken or pork.
  • 1 cup pineapple juice
  • 3 tablespoons brown rice syrup or honey
  • 1 vanilla bean, split lengthwise, or 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon pepper
  • One fresh pineapple (about 3 pounds): peeled, cored, and coarsely chopped

1. In large skillet, stir together pineapple juice, brown rice syrup, vanilla bean (do not add vanilla extract here, if using), cinnamon, allspice, and pepper. Bring to a boil and cook, stirring frequently, 7 minutes or until reduced by half. Stir in half of pineapple and cook, stirring frequently, 5 minutes or until thickened.

2. Remove from heat and cool to room temperature. Remove vanilla bean. (Stir in vanilla extract if using.) Stir in remaining pineapple. Serve at room temperature or chilled.
