Double-Cherry Compote
Serve this compote topped with sweetened yogurt or ricotta cheese, or as a sauce over a scoop of frozen yogurt or sorbet. This would also make a wonderful spread for toast or biscuits, although you might have to cook the compote down a bit to make it less "saucy."
  • 2 pounds sweet cherries, pitted (4 to 5 cups)
  • 1/2 cup dried cherries
  • 1/2 cup frozen apple juice concentrate
  • 2 tablespoons light brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon allspice
  • 3 strips (3- x 1/2-inch each) orange zest

1. In a medium saucepan, combine fresh cherries, dried cherries, apple juice concentrate, brown sugar, cinnamon, salt, pepper, allspice, and orange zest.

2. Bring to a boil over medium heat, reduce to a simmer, and cook 20 to 25 minutes or until cherries are tender and liquid is reduced to a light syrup. Remove orange zest if you like. Serve warm or chilled.
