Curry-Broiled Snapper
Super quick and easy to prepare, these fillets are delicious with a dollop of yogurt and a fresh fruit salsa or chutney.
  • 2-1/2 teaspoons curry powder
  • 3/4 teaspoon coriander
  • 3/4 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 red snapper fillets, with skin (5 ounces each)
  • 2 teaspoons olive oil

1. Preheat the broiler. In a small bowl, stir together the curry powder, coriander, sugar, salt, and pepper.

2. Rub the curry mixture into the flesh of the snapper fillets. Brush the fish with oil.

3. Broil the fish, skin-side down, 4 inches from heat for 5 to 7 minutes, or until just cooked through.
