Creamy Dill-Caper Dressing
Tofu makes a wonderful dairy-free salad dressing. The rich creaminess of the tofu is accented in this dressing by spicy Dijon mustard, chopped capers, and fresh dill. In addition to using this as a salad dressing, it would make a tasty condiment sauce for fish.
  • 1 cup soft tofu, drained
  • 1/4 cup cider vinegar
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup capers, drained and chopped
  • 1/4 cup chopped fresh dill

In food processor or blender, puree tofu, vinegar, mustard, salt, and pepper. Stir in capers and dill.
