Feel free to substitute 1 cup of chopped fresh cherries, or firm, ripe pear for the apple.
- 1-1/2 cups flour
- 1/2 cup unprocessed wheat bran
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon baking soda
- 1 cup buttermilk
- 1/2 cup packed dark brown sugar
- 3 tablespoons extra-light olive oil
- 1 large egg
- Zest of 1 orange
- 1 cup diced unpeeled Granny Smith apple
- 1 tablespoon granulated sugar
1. Preheat oven to 400°F. Line a 12-cup muffin pan with paper liners.
2. In a large bowl, combine flour, bran, baking powder, salt, 1/2 teaspoon of cinnamon, ginger, and baking soda. Make a well in center of dry ingredients.
3. In a medium bowl, whisk together buttermilk, brown sugar, oil, egg, and orange zest. Pour into dry ingredients, stirring until just combined. Fold in apple. Do not over mix.
4. In a small bowl, stir together granulated sugar and remaining 1/4 teaspoon cinnamon.
5. Spoon batter into prepared muffin cups. Sprinkle cinnamon-sugar on top. Bake 12 to 15 minutes or until muffins are golden and a toothpick inserted in center comes out clean.
