Chicken Kebabs with Minted Yogurt Sauce
If you like, make a double batch of the minted yogurt sauce and use it to toss with cooked potatoes for a side dish.
  • 1/2 cup plain low-fat yogurt
  • 1/3 cup chopped fresh mint
  • 1/2 teaspoon grated lemon zest
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 pound skinless, boneless chicken thigh, cut into 16 chunks
  • 1 red onion, cut into 16 chunks
  • 16 cherry tomatoes

1. In small bowl, combine yogurt, mint, lemon zest, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper. Cover and refrigerate until serving time.

2. In shallow bowl, combine lemon juice, oil, garlic, oregano, remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Add chicken and onion, tossing to coat.

3. Preheat broiler. Alternately thread chicken, onion, and cherry tomatoes onto 8 skewers. Broil kebabs, turning occasionally, for 8 minutes, or until chicken is cooked through. Serve with minted yogurt sauce.
