Chicken, Asparagus & Pasta Stir-Fry
Using a small amount of smoked ham in this dish adds an unexpected depth of flavor. Smoked turkey is a perfect substitution for the smoked ham.
  • 2 teaspoons olive oil
  • 1 ounce smoked ham, minced
  • 1 pound skinless, boneless chicken breasts, cut into 1-inch pieces
  • 1/2 teaspoon salt
  • 3/4 pound asparagus, cut diagonally into 1-inch pieces
  • 3/4 cup reduced-sodium chicken broth
  • 6 ounces angel hair pasta
  • 3 tablespoons reduced-fat sour cream
  • 2 tablespoons finely chopped scallion
  • 4 teaspoons chopped toasted almonds

1. In large nonstick skillet, heat oil until hot but not smoking over medium heat. Add ham and stir-fry until it turns light golden, about 1 minute. Add chicken and salt and stir-fry until chicken is lightly browned, about 3 minutes.

2. Stir in asparagus and cook for 1 minute. Add broth and bring to a boil over medium-high heat. Reduce to a simmer and cook until chicken is cooked through and asparagus is tender, about 3 minutes. Remove from heat.

3. Meanwhile, in a large pot of boiling water, cook angel hair pasta according to package directions. Drain, return pasta to cooking pot.

4. With a slotted spoon, transfer the chicken mixture to the pasta pot. Stir sour cream and scallions into liquid remaining in skillet and pour over chicken and pasta mixture. Toss to combine. Serve stir-fry sprinkled with almonds
