Cheese Tortellini in Pepper Sauce
Use this sauce for penne, ziti, or the pasta shape of your choice. Feel free to substitute yellow peppers for the red, or use half of each.
  • 1-1/4 pounds (fresh or frozen) cheese tortellini or ravioli
  • 2 teaspoons olive oil
  • 4 red bell peppers, thinly sliced
  • 4 scallions, thinly sliced
  • 3 cloves garlic, sliced
  • 1/2 teaspoon salt
  • 1/3 cup tomato sauce
  • 1/4 cup orange juice
  • 1/3 cup grated Parmesan cheese

1. In large pot of boiling water, cook pasta according to package directions. Drain.

2. Meanwhile, in large nonstick skillet, heat oil over medium heat. Add peppers, scallions, garlic, and salt, and cook 1 minute. Add 1/2 cup of water, cover, and cook for 12 minutes, stirring occasionally, until pepper mixture is tender.

3. Transfer pepper mixture to a food processor or blender and process to a smooth puree. Add tomato sauce and orange juice, and process until well blended. Return sauce to skillet and cook 1 minute over low heat until heated through.

4. Toss sauce with hot pasta and sprinkle with the Parmesan.
