Broiled Salmon with Spicy Corn Relish
If you prefer, prepare both the salmon and the corn relish early in the day, refrigerate, and serve chilled.
  • 1-1/2 cups frozen corn kernels, thawed
  • 1 tomato, diced
  • 1 small red onion, finely chopped
  • 1 pickled jalapeño pepper, seeded and finely chopped
  • 2 tablespoons red wine vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 3/4 teaspoon salt
  • 4 skinless, boneless salmon fillets (about 6 ounces each)

1. Preheat broiler. In medium bowl, combine corn, tomato, onion, jalapeño, vinegar, cumin, coriander, and 1/4 teaspoon of salt.

2. Sprinkle remaining 1/2 teaspoon salt over salmon. Broil salmon 4 inches from heat for 7 minutes or until just cooked through. Spoon corn relish over hot salmon.
