Broiled Flank Steak with Spicy Orange-Chipotle MarinadeThe deep flavors of this marinade—a zesty combination of smoky chipotle peppers, orange juice, ketchup, and allspice—are well suited to strongly flavored meats, such as flank steak, but also try it on duck or lamb bruchettes.
  • 1 teaspoon grated orange zest
  • 1/3 cup fresh orange juice
  • 2 tablespoons ketchup
  • 3 chipotle peppers in adobo, minced
  • 1 teaspoon adobo sauce from can
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 2 pounds flank steak

  • 1. In a medium bowl, stir together orange zest, orange juice, ketchup, chipotles, adobo sauce, olive oil, allspice, and salt.

    2. Place flank steak in shallow bowl, pour marinade over, and toss to coat. Refrigerate at least 1 hour or up to overnight.

    3. Preheat broiler. Place steak on broiler pan and broil 5 inches from the heat for 10 minutes. Brush with any remaining marinade and broil another 5 minutes, or until medium-rare. Place on a carving board and let rest 15 minutes before slicing.
