Broiled Chicken with Mango-Avocado Chutney
Combining mango chutney with fresh mango and avocado makes a deliciously silky and complex accompaniment for the broiled chicken.
    Chutney:
  • 3 tablespoons prepared mango chutney (finely chop any large pieces)
  • 2 tablespoons fresh lime juice
  • 1 small fresh red chili pepper, seeded and minced
  • 1 scallion, thinly sliced
  • 1/4 teaspoon salt
  • 2 mangoes, diced
  • Half a medium avocado, diced
  • 1/4 cup chopped cilantro

    Chicken:
  • 4 skinless, boneless chicken breast halves (1 pound total), lightly pounded
  • Grated zest of 1 lime
  • 1/4 teaspoon salt
  • 1/8 teaspoon crushed red pepper flakes
  • 1 teaspoon olive oil

1. To make the chutney: In a medium bowl, mix prepared chutney, lime juice, chili pepper, scallion, and salt. Fold in mangoes, avocado, and cilantro. Cover and set aside.

2. To cook the chicken: Preheat the broiler. Spray broiler pan rack with nonstick cooking spray. Season chicken on both sides with lime zest, salt, and red pepper flakes. Place on prepared broiler pan and drizzle with oil.

3. Broil 4 to 5 inches from the heat for about six minutes, turning once, until the chicken is cooked through. Serve with the mango-avocado chutney.
