Broiled Chicken Burgers
Broiled Chicken BurgersChicken thighs provide some fat and moisture to the burgers. Top with shredded part-skim mozzarella for cheeseburgers.
  • 8 ounces skinless, boneless chicken breast, cut into small chunks
  • 8 ounces skinless, boneless chicken thigh, cut into small chunks
  • 3 tablespoons ketchup
  • 1/2 teaspoon rubbed sage
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 slices (1 ounce each) whole wheat sandwich bread, torn into small pieces
  • 1/4 cup grated Parmesan cheese
  • 3 tablespoons low-fat (1%) milk
  • 4 English muffins, toasted
  • 4 romaine lettuce leaves
  • 8 tomato slices

1. In food processor, process chicken until coarsely ground. Transfer to large bowl and stir in ketchup, 2 teaspoons sage, salt, and pepper.

2. In small bowl, combine bread and milk, stirring to evenly moisten bread. Add bread mixture and Parmesan to chicken, mixing well. Shape into 4 patties.

3. Preheat broiler. Broil 6 inches from heat, turning once, for 8 minutes, or until cooked through but still juicy. Serve burgers on toasted English muffins with lettuce and tomato slices.
