Blueberry-Marmalade Crisp
Blueberry-Marmalade CrispFruit crisps are heartwarming, homey, healthy desserts that are very easy to make. The hardest part of the preparation is deciding what fruits to use. This version is a lush blueberry and marmalade combination. Both the lemon zest and pieces of orange peel in the marmalade contain limonenes, which are phytochemicals with antioxidant activity.
  • 3/4 cup old-fashioned rolled oats
  • 3/4 cup packed dark brown sugar
  • 1/4 cup all-purpose flour
  • 3 tablespoons yellow cornmeal
  • Grated zest of 1 lemon
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, cut into bite-size pieces
  • 6 cups frozen or fresh blueberries
  • 2 tablespoons cornstarch
  • 1/4 cup fruit-only orange marmalade

1. Preheat oven to 350°F.

2. In food processor, combine oats, brown sugar, flour, cornmeal, lemon zest, and salt and pulse to just combine. Add butter and process 5 to 10 seconds or until mixture is crumbly.

3. In medium bowl toss blueberries with cornstarch to lightly coat. Spread blueberries onto bottom of ungreased 8- x 8-inch glass baking dish.

4. Dot blueberries with marmalade. Evenly top with oat mixture. Bake 45 minutes or until top is light golden. Cool on a rack.
