Banana, Pear & Peanut Salad
Make this recipe as close to serving time as possible since cut pears begin to brown if they sit out too long. Luckily, it takes only 15 minutes to throw together. This salad can also be served as a delicious fruit dessert.
  • 1/3 cup honey
  • 1/2 teaspoon grated lime zest
  • 3 tablespoons fresh lime juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon nutmeg
  • 1 pound bananas, thinly sliced
  • 1 pound Bartlett or Bosc pears, cut into 1/2-inch chunks
  • 1/4 cup dry-roasted peanuts, coarsely chopped

1. In a large bowl, whisk together the honey, lime zest, lime juice, salt, allspice, and nutmeg.

2. Add the bananas, pears, and peanuts, tossing to combine. Serve at room temperature.
