Baked Moroccan Turkey Loaf
In keeping with the Moroccan theme, serve this meatloaf with couscous.
  • 1/2 cup dried apricots
  • 1 cup boiling water
  • 2 large red bell peppers, cut lengthwise into flat panels
  • 1 pound ground turkey
  • 1/4 cup plus 1 tablespoon chopped cilantro
  • 1/4 cup apricot all-fruit spread
  • 2 egg whites
  • 2 tablespoons minced scallions
  • 1 1/4 teaspoons cumin
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 2 ounces bread (about 2 slices), torn into fine crumbs (to yield 1 cup)
  • 1/4 cup low-fat (1%) milk
  • 1/2 cup ketchup

1. In a small heatproof bowl, cover apricots with the boiling water and set aside to soften. When softened, drain and finely chop.

2. Meanwhile, preheat broiler. Place bell pepper pieces, skin-side up, on broiler pan and broil 3 to 4 inches from heat until skin is blackened and charred, 10 to 15 minutes. Place peppers in bowl and cover. Set aside to steam about five minutes to loosen skins, then peel them. Finely chop peppers and set aside.

4. Preheat oven to 375°F. Spray 8- x 4-inch loaf pan with nonstick cooking spray.

5. In a large bowl, stir together ground turkey, 1/4 cup of the cilantro, 3 tablespoons of the fruit spread, the egg whites, scallions, 1 teaspoon of the cumin, the salt, black pepper, and 3/4 teaspoon each of the ground coriander, oregano, and paprika.

6. Stir in chopped apricots, bell peppers, bread crumbs, and milk until mixture is well combined.

7. Spoon mixture into loaf pan. Smooth top and bake until turkey is cooked through, about 25 minutes. Let sit 10 minutes, then invert onto platter.

8. Meanwhile, in small bowl, blend ketchup with 1 tablespoon of water and remaining 1 tablespoon cilantro, 1 tablespoon fruit spread, and 1/4 teaspoon each cumin, ground coriander, oregano, and paprika.

9. Serve slices of turkey loaf with ketchup sauce on the side.
