Winter Vegetables
So-called "winter vegetables" include a range of vegetables, from parsnips to potatoes to winter squash. Though they are not botanically related what they do have in common is a sturdy dense texture and a long "shelf life." It is these keeping qualities that allowed our forefathers to have vegetables in the cold winter months when gardens were no longer producing. Hence the name winter vegetable.
