Phytosterols are naturally occurring plant compounds that are chemically similar to cholesterol. Some phytosterols are not absorbed by the digestive tract and block the absorption of cholesterol into the bloodstream. Plant sterol-enriched foods are becoming more common, but there are plenty of raw ingredients that are rich in sterols, such as nuts, seeds, legumes (especially soybeans), and the "germ" portion of grains. Although many of these ingredients can be high in fat, it's fat that's good for you. Try adding more phytosterols to your diet with one of the delicious recipes suggested below.
