Currying Flavor
To many Americans curry is a stew, made with a yellow spice called curry powder. In India, however, there is no such spice. Curry powder is actually a blend of spices, and it can vary considerably from region to region, and from cook to cook. Some curry powders can have 25 or more spices in them, though there are some spices that are common to most: coriander, fenugreek, cumin, turmeric, and cayenne are fairly standard. Curry blends can be used to flavor all sorts of dishes, from stews and soups, to baked dishes and stir-fries, to salads and side dishes. Check out some of the recipe links below.
