What is surimi?

Surimi (Japanese for formed fish) is fish pulp that is seasoned and then formed into different shapes to imitate other seafood, such as "imitation crabmeat." The fish (in North America it is usually Alaskan pollack) is ground into a paste, mixed with a fish concentrate, colored and then shaped into whatever it is imitating. It is slightly sweet in flavor.
