a) Lefse is sort of a Norwegian tortilla. A dough made from potatoes, flour, and evaporated milk is rolled into flat rounds and cooked on a griddle. If you live anywhere near a sizable Norwegian population, you probably have access to fresh lefse. But failing that, you might try to find packaged lefse, which you resoften by sprinkling with water and rolling up in a kitchen towel--this doesn't quite compete with the fresh version, but it's still pretty good. We recommend spreading it with a very sensible skim of butter and topping it with apple butter.
