My recent physical exam revealed that I have a "high" LDL cholesterol level of 160. What foods might I be eating that cause a higher LDL? Any foods that I should be eating more of to help lower it?

Eating more plant foods and fewer animal and processed foods is an excellent way to lower LDL cholesterol. Many foods are linked to an improved LDL cholesterol profile including garlic, onions, chili peppers, shiitake mushrooms, artichokes, soy products, grapes, and the new margarine spreads that contain plant sterols and stanols. Foods high in soluble fiber are particularly helpful in lowering LDL cholesterol levels. Brown rice bran and oat bran are especially useful because of their soluble fiber content. Carrots may also be beneficial because they contain calcium pectate, a type of soluble fiber. In addition, choose foods that are high in omega-3 fatty acids, vitamin C, vitamin E, beta-carotene, pantethine (active form of vitamin B5  pantothenic acid), chromium, copper, and lycopene.
