Tomatoes to Boost Immunity (Italy, U.K.)
Lycopene and other cancer-fighting substances in tomatoes appear to have immunity-enhancing properties, say researchers at the University of Milan and the Institute for Food Research in Norwich, England. Lab tests showed that a three-week tomato-rich diet (1/4 cup of tomato puree daily, containing 16.5 mg of lycopene) helped protect infection-fighting white blood cells.
