Folate is a B Vitamin that has been linked with a wide variety of health benefits, ranging from heart disease to birth defects to Alzheimer's. Folate has turned out to be so important, in fact, that many foods are now fortified with it (in its synthetic form, which is called folic acid).

Getting enough folate from your diet is also important, as foods that are high in folate bring with them other important nutrients, such as vitamin C and soluble fiber. The recipes featured this week have a wealth of folate, each serving providing between 25% and 40% of the recommended daily intake.
